Teriyaki Meatballs Under 30 Minutes

Teriyaki Meatballs is another one of our go-to meals to cook up quickly. The best part is this meal is easily ready in under 30 minutes!

I found this recipe from Clean Eating With Kids and just knew we would love it. {I made a couple minor changes to really make it our own.}

First up- Rice. Cook your rice as normal. I use my InstantPot and cook basmati rice in big batches. So I usually always have rice ready to add to any meal.

Next, let’s get started on the meatballs.

Mix together hamburger meat, bread crumbs, egg, garlic, salt & pepper, and onion with a fork.

Using a cookie scoop, form balls out of the meat mixture. Place in a hot pan with a little bit of olive or coconut oil over medium-high heat. Brown meat on all sides, approx a total of 5 minutes.

Place the browned meatballs in a deep dish and start on the sauce.

Using the same pan, add in your soy sauce, honey, garlic, ginger (fresh or powdered) paprika, cumin, oregano, and apple cider. Bring to a boil and then pour over the meatballs.

Now place the dish into your oven at 400F for 15-20 minutes. Halfway through turn the meatballs to coat with sauce (this isnt necessary though!).

While meatballs are cooking through, slice zucchini into thin rounds and fry in the (same) pan. Season with a little bit of olive oil and S&P.

Serve your teriyaki meatballs over rice with the sauteed zuchinni and then top it with the sauce. Enjoy!

Meatballs:
-Ground Beef, 1lb
-Minced Onion, 3 Tbsp
-Minced Garlic, 2-3 cloves
-1 Egg
-Breadcrumbs, 1/4C
-S&P to taste
Sauce:
-Soy Sauce, 1/2C
-Apple Cider Vinegar, 3 Tbsp
-Honey, 4Tbsp
-Minced Garlic, 2 cloves
-Ginger (fresh-1 tsp; powder-1/2 tsp)
-Paprika, 1 tsp
-Cumin, 1 tsp
-Oregano, 1 Tbsp

Preheat oven to 400F. Mix together all the ingredients for the meatballs. In a frying pan, over medium-high heat, add in a little bit of olive or coconut oil. Brown meat on all sides, about 5 mins. Place in a deep dish and start on sauce in the same pan. Bring all ingredients to a boil and then pour over meatballs. Cook through, approx 15 minutes. Serve over rice with sauteed zuchinni.
