Ground Beef Stroganoff

Let’s talk childhood dinners.  Do you remember sitting around the table devouring your favorite dish, or maybe sitting on the couch propped up with a tv tray watching your weekly family show like Full House, Home Improvement, Family Matters or maybe the Wonder Years??  

Growing up for me in my family, it was mostly dinner at the table with the TV off.  I had some great dinner favorites like sloppy joes and chicken nuggets!  haha {Quite the palate, I tell ya!}  

My husband had much better tastes buds growing up and one of his favorites was always Beef Stroganoff.  While I wont ever make my version the same as his parents, he has learned to love mine all the same!  {Thats a great hubby-find yourself one who doesnt try to compare recipes constantly…though it will happen regardless!  haha}

My go-to stroganoff recipe comes straight from Yellow Bliss Road’s website.  This recipe is so quick and simple, so its perfect for my cooking style.  

Start off with sauteeing some minced onions in a little bit of garlic infused olive oil, in a large pan or dutch oven.  My favorite garlic oil is from Inspirations Tea Room in Edmond, OK.  You can also order some from amazon here.

Once your onion is cooked through and translucent, add in your ground beef and brown, draining off grease, as needed, seasoning with salt and pepper.  Add in minced garlic, mixing in to the browned beef for 1-2 minutes.  

Next add in beef broth, cream of mushroom, can of milk, and pasta.  Stir to combine.

We love this gluten free pasta for stroganoff.

Bring to a boil and then reduce heat to low and cover.  Letting pasta cook for 15 minutes or until tender.  

Once pasta is cooked, remove from heat and add in sour cream.  Stir to combine. Top with parsley and serve!

Beef Stroganoff

*Garlic infused Olive Oil
*Minced Onion, about 1/4 – 1/2 cup
*1 lb ground beef
*minced garlic 2 tbsps
*10 oz Cream of Mushroom
*10 oz Beef Broth
*10 oz Milk 
* 2 1/2 C pasta 
* 1/2 C Sour Cream
*Fresh or dried Parlsey to taste
*S&P to taste

Start by heating garlic infused olive oil in a large deep pan or dutch oven dish.  Sautee’ onions until transulcent.  Add in ground beef and brown.  Once cooked through, add in minced garlic. Next add in cream of mushroom, beef broth, and milk {using can}.  Then add in pasta and combine.  Bring to a boil, then reduce heat to low, cover and let simmer for 15 mins until pasta is tender.  Remove from heat and add in sour cream, s&p and combine.  Top with parsley and serve.
