Super Simple Taco Soup

Its that time yall!  SOUP WEATHER!  

This taco soup is so simple.  So simple that Bug can do it without any assitance.  

We tried this recipe and loved it and have been using it as a base for years now.  

To begin, you just need to brown you meat in a little bit of olive oil.  I love using garlic infused olive oil in my dishes to get that extra oomph of flavor to the meat.  Here you could add in onions and fresh garlic if you have it on hand.  We didnt this time, so we skipped it. 

After your meat is browned, you may need to drain any grease.  I dont typically have a lot of grease in my pan so we just move on to the next step.  

Add in your taco seasoning and stir.  Season according to taste, about 2 Tbsp or a full packet. 

Start opening and dumping in your canned ingredients.  {I usually start with a liquid to help keep the meat from burning!} 

For the chicken broth, I always use the can of cream of chicken to measure out my broth.  Helps get the cream that was left it can too!  Win-Win!

Stir to combine and let heat up.  This really doesnt take long at all, just a couple minutes to get to boiling temperature.  

Serve with cheese, sour cream, and chives on top with a side of tortilla chips.  

Perfect soup for big gatherings on crisp cool days!  

I couldn’t find the exact bowls that I have here, but here are some fun new ones that I think look great and would be fun to serve soup in:

  • Ground Beef, 1lb
  • Taco Seasoning Packet or 2 Tbsp of seasoing
  • Chicken Broth 10.5 oz
  • Cream of Chicken 10.5 oz
  • Pinto Beans
  • Black Beans
  • Kidney Beans
  • Corn
  • Petite Diced Tomatoes
  • Green Chile Enchilada Sauce
Optional:
Olive Oil, garlic, onion, shredded cheese, sour cream, chives, tortilla chips

Brown beef in a little bit of olive oil.  If you want to add in garlic and onion do so now.  Drain any grease.  Mix in 2 Tbsp taco seasoning.  Open and pour in the remaining ingredients, starting with enchilada sauce. Stir to combine and let heat to just boiling.  Serve with shredded cheese, sour cream, chives and tortilla chips for a hearty fall soup!
